2501 - Today's bake, Cream Brulee and Cream Caramel.

Creme Brulee also known as burnt cream or crema catalana is a dessert consisting of a rich custard base topped with a contrasting layer of hard caramel.

Creme Caramel or caramel pudding is a custard dessert with layer of soft caramel on top, as opposed to creme brulee, which is pudding with hard caramel top. The dish is eaten throughout the world!

Ok senang cerita sis translate, Creme Brulee yang tabur gula atas permukaan then kita kasi bakar dia. Haa getheww. Creme Caramel pula, kalau hangpa pi pasar malam depa panggil puding gula hangus. Ha, yang tulah gais! Tapi kalau dekat pasar malam tu tak berapa syok, sebab dia tak lemak gebu gethew! Jom try recipe ni, kalau ada soalan boleh tanya sis. Heheh.

((CARAMEL SUGAR))

Ingredients:
  • 150 gm           Sugar
  •  75  gm           Water
Method:

  1. Combine sugar and water in a saucepan.
  2. Bring to boil until the sugar turns to an amber colour. ((something like brown colour))
  3. Remove from heat and pour the caramel sugar into cups; let set.

((CREME CARAMEL))

Ingredients:
  • 125 gm             Fresh Milk
  •  75  gm             Egg
  •   1   gm             Vanilla Essence
  •  25  gm             Sugar
Method:


Bring the milk and part of the sugar to boil.



In another bowl mix egg, sugar and vanilla essence together.



Pour the milk into eggs mixture and strain it.


Pour into cups and bake in water bath at 160 celcius for about 45 minutes or until set.


Each a cup: 110 gm.


Refrigate overnight.

((CREME BRULEE))

Ingredients:
  • 125 gm          Dairy Cream
  • 100 gm          Fresh Milk
  •  40  gm          Egg Yolk
  •   2   gm          Vanilla Essence
  •  25  gm          Sugar
Method:

Combine and gently whisk the egg yolks, part of the sugar.


and.. vanilla essence.


Bring the milk, cream and sugar to a boil.


Slowly pour the hot cream to the egg mixture.


Strain through a mesh sieve.


Fill the ramekin with the mixture and bake in a water bath at 150 celcius for 14-15 minutes.
Can add 2/3 minutes.


Wuu, it's totally hot!
Notes: More egg white, more softner!

Hi.

1501 - Today, there are 3 types of Muffin. Beefbacon, Chicken Ham and Chive Muffin. At first, bila dengar bacon mesti ingat pig leulz. But, Alhamdulillah lega sis bila dengar it's beef ooook. Dahlah my fav beefbacon. Wee! Beefbacon susah nak cari dekat supermarket, but no worries.. kita buat exchange dengan chicken ham ok? Haa, lagi senang. Chicken Ham hang boleh dapat dekat Giant, Big Aeon, Tesco & sekawan dengannya.

So, here we go!


((SAVOURY CHEESE BEEF BACON MUFFIN))

Ingredients:
  • 375 gm          Soft Flour
  •  23  gm          Baking Powder
  •   7   gm          Salt
  •  60  gm          Sugar
  •  83  gm          Butter
  •  60  gm          Onion ((chopped))
  •   9   gm          Garlic ((chopped))
  • 200 gm          Beef Bacon
  •  75  gm          Egg
  • 355 gm          Fresh Milk
  •  75  gm          Mozarella Cheese
  •  30  gm          Parmesan Cheese
Method:

Firstly mix flour, baking powder, salt and sugar together.
Mix it in a bowl and put aside.


Saute onion and garlic with butter.


Beef Bacon also!


That smells.. masya-Allah. 


Then, mix beef bacon with dry ingredients and mix.


Follow by egg.


and fresh milk into a batter.


Fold in cheese, save some for topping! :)



Scoop into muffin cups and sprinkle cheese on top.
Bake at top 190 celcius, bottom 180 celcius for 10-15 minutes.


 Beef Bacon Cheese Muffin.


Ham Cheese Muffin.


Chive Cheese Muffin.

Ok guys, if you want to change it with ham or chive.. just change. Don't worry, the recipe is still the same. Good luck!

Holla!

0801 - Today's bake, Banana Bread. For your information, zaman dulu kala mat saleh ni suka makan Banana Bread ni. Tapi orang kita suka Kek Pisang. Haa sebab tu jarang nak jumpa Banana Bread dekat Malaysia ni. Haa getheww!



Ingredients:
  • 110 ml      Corn Oil
  • 140 gm     Sugar
  •  3    nos     Eggs
  • 350 gm     Medium Flour
  • 18   gm     Baking Powder
  •  2    gm     Baking Soda
  • 350 gm     Banana Ripe
  • 110 gm     Chopped Walnut
((nos = biji))

Method:


Mesh the banana well.


Combine banana, oil, sugar and eggs until well incorporated.



Mix in dry ingredients and walnut.
p/s: sift the dry ingredients first.


Pour mixture into loaf pan.




Bake at 160 celcius for about 50-55 minutes.

Assalamualaikum and Hi.

0701 - Today's bake, Marble Chocolate Muffin and Wholemeal Nutty Muffin. As usual, check kuku hang tu naa! Risau sis.


((MARBLE CHOCOLATE MUFFIN))

Ingredients:
  • 16 ml     Corn Oil
  • 16 gm    Melted Butter
  • 60 gm    Sugar
  • 28 gm    Eggs
  • 47 ml     Milk
  •  1  gm    Vanilla Essence
  • 79 gm    Medium Flour
  •  3  gm     Baking Powder
  •  1  gm     Salt

For Chocolate Batter:
  • 80 gm     Muffin Batter
  • 40 gm     Melted Dark Compound ((double boil ok))
Method:
  1. Blend oil, butter and sugar.
  2. Add eggs, milk and vanilla essence to the butter mixture.
  3. Add in dry ingredients to incorporation.
  4. Stir in melted chocolate to muffin batter.
  5. Scoop plain batter and chocolate batter into muffin cups.
  6. Bake at 190 celcius for 18-20 minutes.

In a cup make sure:
- 40 gm plain batter
- 15 gm chocolate batter.




p/s: If you a chocolate lover, you can put chocolate chip on the top too! :)

((WHOLEMEAL NUTTY MUFFIN))

Ingredients:
  • 68 gm      Medium Flour
  •  4  gm      Baking Powder
  • 45 gm      Sugar
  • 23 gm      Butter
  •  1  gm      Salt
  • 45 gm      Eggs
  • 45 gm      Milk
  • 11 gm      Honey
  • 11 gm      Molasses  ((brown sugar))
  • 23 gm      Wholemeal  ((soak with water first, do not too watery ok?))
  • 50 gm      Chopped Walnut
Method:
  1. Cream butter, sugar and salt together until the mixture is smooth and light colour.
  2. Gradually add eggs and milk to the butter mixture.
  3. Add honey and molasses until incorporated.
  4. Add the dry ingredients and walnut until evenly moistened.
  5. Scoop batter into muffin cups.
  6. Bake at 190 celcius for 18-20 minutes.
